Butternut squash mac and cheese-ish

You're like what the hell is with the -ish, right? Well, there's no traditional roux in this. And as far as fat assness goes, it's not as bad as your typical mac & cheese. No butter or flour in a roux, skim milk, and whole wheat pasta. Don't worry, it's still edible.

Also, I hate peas, but had some I needed to use. If I had broccoli I would've put that in here instead. Food for thought, friends. Food for thought.

Butternut squash mac and cheese-ish

by Life According to Steph
  • 20 oz bag of frozen butternut squash
  • 1.5 cups skim milk
  • 2 cups chicken broth
  • 3 tbs garlic
  • 2 tbs greek yogurt
  • salt & pepper
  • 1 lb whole wheat pasta
  • 1 cup shredded gouda
  • 1 cup sharp cheddar
  • 1/2 cup parmesan cheese
  • 1/2 bag frozen peas or broccoli
Add butternut squash, garlic, milk, and chicken broth to a medium pot. Bring to a boil, then reduce heat to medium and cook 20 minutes or until squash is tender, stirring frequently.
Remove from heat and pour into a blender (you can also use an immersion blender for this step). Add cheeses, yogurt, and salt and pepper. Blend.
Steam peas or broccoli and drain.
Boil pasta in salted water. Drain and toss with squash mixture and steamed vegetable.
You can eat it like this or you can bake it off in a 300 degree oven for 15 minutes.

  9. One I love the above comment from your momma. That totally made me smile!

This recipe sounds delicious. I have used pureed butternut squash in my cheese sauces before... but, never like this... So I am totally going to give it a try!

  10. This sounds delicious! I'll probably swap out the peas for something else, but other than that, YUM-O!

  11. Love all the healthy alternatives. We use wheat pasta often too. Sounds great to me and I actually enjoy peas but broccoli would go well too.

  12. dirty dancing!! fun!
i love peas, so i'd keep them in and chuck some brocc as well. definitely printing this and hopefully trying.

  13. Im always craving mac and cheese. this sounds perfect since it's not AS bad for you. YUM.

  14. This looks amazing and super easy!! And totally agree with you- broccoli over peas.

  15. I hate making the roux, so this is nice. And yum to the gouda! I love its smokiness.

  16. Butternut squash pasta > regular cheesy pasta any day.

  17. Frozen butternut squash why have I never thought to look for that? That recipe looks so good!

  18. This looks super tasty. I'm going to make this ASAP but with veggie broth :)

  19. I would try this! Thank you! Enjoy Dirty Dancing on stage.

  20. This looks amazing! I hate peas too, but have a feeling they'd be great in this :)

  21. YUM! I think this sounds awesome, and I actually LOVE peas too- so it's right up my alley!!! :)

  22. Yes! I remember this from your post yesterday and it looks delicious to me. I love butternut squash and I either buy the pre-cut or frozen because it's so much easier. Have fun watching Dirty Dancing!

  23. Dang! This looks good! I might have to print this out and try it one night. Thanks!

  24. I like the idea of broccoli instead of peas. I love butternut squash so win for me.

  25. Excellent! I was planning on making something like this for dinner (sneaking pumpkin puree into the cheese sauce and chopped up cauliflower in with the pasta) but I didn't have a recipe. Are you a mind reader? =)

  26. I agree on the broccoli. I add it if I have it. Also, I add a dollop of greek yogurt in place of the milk, even when I make boxed mac and cheese.
I do evaporated milk and cornstarch in place of the roux. I swear you can't tell a difference.

  27. It looks great and I can use gluten free pasta and make it work! Yum yum!

  28. This is a genuis approach to hiding veggies. Coincidentally, I have a butternut squash in the fridge. Looks like its days are numbered!

  29. You don't like jeans, you don't like peas... #canteven
