Zucchini Pie

While I love zucchini pie, I'm really posting this recipe because every time I make it, I have to search my own blog where it hides in the comments of a long ago post to hunt it down. That being said, this is great to make on Sundays and portion out for the week for breakfast or lunch. And those of you with zucchini in your gardens will be all oh my God what the hell do I do with all of this zucchini in a few months, so pin it and enjoy! Thanks to my girl AEB for introducing me to this recipe a few years back.

Ingredients
3 cups zucchini, grated (~1 large or 2 medium, it took me 1.5 big mediums). Squeeze to remove excess water. 
1 small chopped onion or bunch of green onions
1 cup Bisquick (I make my own whole wheat version and use that)
5 large eggs
1/2 cup vegetable oil (coconut oil is okay)
1/2 cup parmesan cheese
1/2 tsp marjoram (if you don't have it, no worries)
1/2 tsp ground mustard
1 tsp parsley 
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt
1/8 tsp pepper
Directions
Preheat oven to 350. Grease a pie dish - I use a Crate & Barrel quiche plate and it fits perfectly.

Dump all ingredients into a big bowl and hand mix, then pour into pie dish. 

Bake for 50 minutes.

  3. i thought this was going to be hard to make but the fact that you just dump everything into a bowl, mix by hand and then shove in oven? YES PLEASE!!

  5. Yum, sounds relish! Brie recently mae some zucchini bread, and I was all "EW GROSS!" And then I took a bite, and it was delicious. I have zucchini coming soon, so this will be on my list!

  12. Cracking up at the haiku! We learned how to make zucchini pie at our cooking class in Tuscany but we've never tried to do it at home. BUT Aaron just planted some zucchini so if a) it makes it and b) no one steals it, we'll try it!

  14. The hiaku is awesome. I had a professor in college who used to make us start each class writing Hiakus (it was some reporting class) the idea being able to condense what your'e saying into as little words as possible. To this days Hiaku's hold a special place in my heart.
    The pie looks yummy too!

  19. I think we're growing zucchini. I can't remember. But I'm the only one in my house who likes it so I think I'll make this for myself on a Sunday and eat it for lunch all week.

  24. That is easy! And I just picked up some fresh zucchini from the farmers market and was wondering what I would do with it. I'm curious though, what's your whole wheat version of bisquick? I have a recipe I use for whole wheat pancakes. Wondering if that's the same thing as a version of bisquick. . .

  26. I love zucchini so I'm so intrigued by this! is it more of a quiche consistency or more like a muffin?? Hopefully that makes sense.
