Personal Portobello Pizzas for Punks



Yes, I did add the punks in the title just for alliteration. What can I say, I'm a sucker for the occurrence of the same letter or sound at the beginning of adjacent or closely connected words. I'm also a sucker for easy meals with few ingredients, which this one is. It's on the healthier side too, which doesn't hurt.

Ingredients
2 portobello mushroom caps, stems removed
a handful of tomatoes (I used grape and cherry heirloom), sliced
Mozzarella cheese
Pesto
Olive oil
salt & pepper

Directions
Preheat oven to 375. Lightly coat mushroom caps with EVOO and bake for five minutes.

Remove, and top the underside with pesto. Use as much or as little as you'd like. I think I used about a tablespoon for each side. Top with mozzarella cheese (I added two slices to each because cheese is life) and tomato slices.

Broil for an additional five minutes, keeping a close eye on it. That's it!

If it gets a little watery, just drain it off in between.

So you say you want more veggies? Spinach muffins



Hey ohhh. Happy Saturday. One of my Choose Your Own Adventure Goals for this month is to try all new recipes in categories like breakfast, soup, appetizer, main dish, side dish, and dessert. Another one of my goals is to add more veggies to my diet. These spinach muffins kill two birds with one stone. Thanks to my friend AEB for sharing the recipe with me - she's also responsible for the zucchini pie I make!

This recipe is from The Green Forks with few alterations.

Ingredients
1 cup  flour
1 cup whole-wheat flour
1/4 cup flax seed
3/4 cup sugar
2 tsp baking powder
1/2 tsp baking soda
1.5 tsp ground cinnamon
1/2 tsp salt
1/4 cup vegetable oil
¾ cup milk
1 (6 ounce) bag fresh baby spinach
2 mashed bananas - I used some out of the freezer
1-2 tbs applesauce 
2 tsp  vanilla extract

Directions
Preheat oven to 350°F and line two 12-cup muffin pans with paper liners. I only got 16 muffins out of these because I filled mine a little high.

Whisk together dry ingredients in a large bowl: both flours, flax seed, sugar, baking powder, baking soda, cinnamon, and salt. Set aside.

Using a food processor, process spinach until you get some room in there. Add oil and milk and process  until completely puréed. Add banana, applesauce, and vanilla; process just to mix.

Pour wet mixture into dry mixture and fold together with a rubber spatula until completely combined.

Fill muffin cups about ⅔ full and bake 17-19 minutes or until a toothpick inserted into the center comes out clean.

When they cooled, I flash froze them in the pan then stored them in a ziploc in the freezer. All set to go for this week's breakfasts!

Time to refuel

This actually is a burnt out light bulb. 
MAN. My light bulb is burnt out you guys. I'm busy at work, I have a zillion errands to run, I can't catch up on hausfrauing, my mind is going a mile a minute all the time. I'm feeling the pull from many directions, and pressure to do and be from all sides. My brain seriously felt like it might fall out of my head yesterday.

This morning I thought about the small things that made me smile over the past week and it helped me relight my fire enough to switch it into gear and finish this week out in ass kicking style.
  • Sleeping with the windows open
  • New nail polish
  • Catching Overboard on tv
  • Staying up late to finish a good book
  • Sleeping in
  • Laughing so much my cheeks and stomach hurt
  • Dreaming about soft ice cream
  • Found money
  • Seeing lots of sweet mullets in person
  • A successful new recipe
  • A coupon for a free iced coffee
  • Two vats of iced coffee in my fridge 
  • Spending time with my BFF 
  • Hearing one of my more obscure favorite songs on the radio
  • The arrival of US Magazine in the mailbox just as the weekend is starting
  • Leftovers from my neighbor =  don't need to pack my lunch
  • A cheery little pitcher
  • Drying lavender
  • Kisses from my dogs
  • Getting a video of my brother's first college soccer game from my mom since I couldn't be there
  • A funky bottle adds a little disco to dish doing 
  • Fruit in a bowl
  • Turning off the Republican National Convention and going to bed
  • A shopping trip with MFD
  • The smell of baby powder
  • Brother's Pizza
  • Getting veggies from my uncle's garden
  • Brie
  • A three day weekend looming in the not so distant future
What's getting you over the hump today?

p.s. I mentioned coffee twice in that list. That calls for another cup. Cheers.
