The weekend that was - This weekend I...

1. Made quesadillas for a quick Friday night dinner. Just your basic cheese on whole wheat tortillas with some garnish. I'm a big fan of quesadillas. Big. Huge.

2. Lazy hausfraued, employing my swiffer duster instead of the ol' rag and Pine Sol.
3. Got my farm share, and used fresh eggs and mushrooms for breakfast on Saturday. I freaking love fresh eggs.
4. Ran errands in the glorious weather on Saturday. I scored two mats at Bed, Bath & Beyond on clearance for the price that I normally pay for one. I also managed to leave Sam's without any baked goods because MFD was not with me. 
5. Oatmeal for this week's breakfasts. Lunch and dinner - baked chicken and either roasted broccoli, steamed asparagus, or sauteed cabbage. 
7. Spent a lot of time outside with these spring fever having dogs.
8. Purged and reorganized my spices after my new delivery of Penzey's. I also got this awesome dish towel from them.
9. Whipped up a quick dinner Saturday night: bacon, shallot, mushroom, and leek pasta in a cream sauce.
10. Listened to Frank play some tunes and hung out with framily yet still managed to be home in bed by 11:30.
11. Went to a nice family birthday lunch for my step grandpop and cousin. Me, MFD, Stephen & Aub are not pictured.
Things I did not do:
  • Make it to Target
  • Pack for Mexico
  • Get enough sleep due to dog ahole wakeup committee both days
  • Partake in my favorite new Sunday ritual of early to bed in fresh sheets to read and watch Downton Abbey...I was too busy taking chicken for the week out of the oven at 10 p.m. and making lists of all the shit I need to get done this week

Things you may have missed this weekend: a date with Amanda.

On this date last year, I was in the hospital waiting for MFD to have surgery after his accident. I'm quite glad we're in a much better place this year. And very grateful to be showered and in clean clothes instead of looking and smelling like a dirty hobo camping out in a regional medical center.

Tomorrow I'm sharing a crescent roll jalapeno popper recipe. Appetizers are by far my favorite things.

  2. I love fresh eggs. I find the yolks in fresh eggs to be richer in color and flavor. I had a neighbor in Vermont who had a small working farm and I was able to always purchase fresh eggs and organic, grass fed beef at prices lower than the grocery store.

  3. Farm share. Brilliant. I need to figure out how to get in on that this year. Also, I'm already sad that the cold is coming back. The weather this weekend was amazing.

  5. Beauty of a weekend. I will take whatever warm days we get and say Thanks! I need to taste the fresh eggs sometimes. I guess I do not think one egg tastes different from the other, like those Eggland's best taste like the regular eggs to me. Anyway, lucky you and Mike Doyle going to Mexico now that the polar v is back. Godspeed for a safe a happy trip. Love your MOMMA

  10. I'm all about the cheese/tortilla goodness. I have to admit, when I looked at the pic of that dish towel, I thought it said "Love people. Cook them tasty good." While it just ain't raht grammatically, I thought it was amusing. Then I looked again and realized the 'g' was an 'f', it made more sense, though not quite as funny. - Ska

  11. yum - love quesadillas! we took the pugs to petco yesterday and got them to actually run during a quick walk. rosie is super lazy and it was so fun seeing her so energetic. it was like she was saying "finally the weather is less crappy!" ha. and now it's 25 degrees again booooo. and glad your husband is in better health this year!

  12. Girl I didn't sleep enough sleep either. But that quesadilla looks freaking amazing. Do you have a quesadilla maker or what? I would love to be able to make those at home, especially with a whole wheat, low calorie wrap?! Help a sister out. Great job on the meal prep and your Saturday night dinner looks out of this world.

  15. Quesadilla's with just cheese at home is my favorite! Yum!!! Yours looks delicious!! I have never had fresh eggs before...or at least I don't think I did. Maybe I don't know what I am missing?!

    All the pug butts! I love it! My dogs were enjoying the nice weather this weekend too! Until they realized it was bath time...then not so much. Mac smelt like the dirty hobo you spoke of.

  18. First, I need to tell you that I'm jealous of your eyebrows. They are perfect, even though I'm sure I sound weird, haha. Second, we've been eating fresh eggs for two weeks from my MIL's farm, and I LOVE quesadillas! We've even branched out to making new kinds of quesadillas like the Reuben quesadillas. So versatile.

  20. I am a quesadille lover myself! My brother even perfected the taco bell quesadilla sauce so we use that whenever he makes us some! Looks like you got a lot done, even if it wasn't everything on your list!

  22. Damn, I am hungry after reading this. I could skip a few meals, as I think I may have gained 5lbs from all the shit (but delicious) food I ate while in Philly last week.

    I laughed when you mentioned Penzey's, because I always wonder how they stay in business. It seems like there is NEVER anyone in the actual store.

  23. Glad you and MFD are doing well this year! I'm sure the pugs just sensed how nice it was outside and NEEDED to get out NOW. Although I think with the cold and more snow headed this way soon, your Mexico trip is timed very well.

  28. If Scott comes to the grocery store with me (especially Costco), the trip is exponentially more expensive. Not a coincidence. Plus, the Swiffer Duster is the only thing that actually gets me dusting…
    Speaking of reading, I think you might like The Maze Runner. Keep it in your queue! I'm really enjoying it.

  29. The Downton finale was so good! (But it's like an hour and 40 minutes long, so be prepared.) A friend of mine hosted a Downton dinner party and we all brought dishes from the Victorian era (yes, I made cucumber sandwiches!) Everything was surprisingly tasty. Then we watched the show and cackled in delight as the Dowager insulted everyone.

  30. We have quesadillas like once a week. Ha! I do cheddar and pepperjack cheese, shredded chicken and pico di gallo, then dip in sour cream. YUM! How does the Swiffer duster work? Does the dust fly everywhere. I need to work on the blinds in my house soon.
