TWTW - Columbus Day Edition

Do you get bank holidays off? Me neither. Cue the tiny violins and the quiet rage.
Mini pumpkin cheesecakes. MFD ate them like he was going to the chair. They're gooey, they're fall, they're for you. Make them.
Spinach and artichoke dip bread bowls - I had a roll of Pillsbury italian bread. I cut it in nine pieces, cut each piece in half, and then smooshed those pieces in the bottom of mini muffin tins. I dolloped leftover spinach & artichoke dip into them and sprinkled a bit of mozzarella cheese on top. I baked at 350 for 15 minutes and 375 for five. These were good, but would be better with french bread.
A leisurely morning with a lot of coffee and a little making of tortilla soup. I added lime juice and cilantro this time, which really lightened it up.
We had a great night at Kim & Esteban's bridal barbecue. Lots of wine, laughter, reminiscing, celebrating and talking late into the night. We seem to have known each other for an eternity, but really it's only been 23 years. MFD and I crashed at Christy's house and were up too late. Thanks to my mother-in-law for last minute dogsitting!
After a delayed start to the day due to car issues, I enjoyed a club sandwich with Kim and a visit from my mom, took a nap, read a lot, and pulled dinner out of the freezer. Our plans for a packed Sunday transitioned to a lazy one, and that was fine by me.

  8. Even though I had to work today, I was hoping clients would be closed so it would at least be quiet, but nooooo, no such luck. Um, I want the spinach dip to start, your deconstructed parm for main, and finish with pumpkin cheesecake. If you could work on that....thanks :)

  11. So I feel as though Presidents day is an under celebrated holiday and it should be illegal to work today. I am going to need some of those pumpkin cheesecakes and spinach/artichoke bread bowls to hold down my disappointment of being at work on a holiday. Please and thanks.

  16. Looks like a fun weekend filled with good food! I actually had one of those too, but the thought of blogging about it makes me want to crawl under my desk. I suck at blogging, and life, really, lately. It might be time for some time off again.
