the weekend that was

And good crap it was a beauty of a weekend here. I hope it was where you were too.
Friday night we went to dinner at Stephen & Aubrey's, and Aubrey asked me to be a bridesmaid. Joy, shrimp scampi, pound cake and red wine followed.
Saturday morning hausfrauing, dog chicanery, and iced coffee outside.
Lori came down and we headed for Villanova to tailgate and watch Sean's soccer game. It was a gorgeous day and Villanova won.
We're all so proud of Sean - dean's list, great soccer player and really nice and kind person.

Weekly food prep
1 - Scrambled eggs with green onions and extra sharp cheddar
2 - Kidney beans in the crock: I soaked a bag of dried beans overnight, then boiled a pot of water and added them. I cooked it for 10 minutes to release the toxins, then put them in the crock, covered them with water and cooked them on low for three hours. NOTE: When you are making dried beans, it is crucial to boil them even if you are cooking them in the crockpot. Do not poison yourself on my watch, people. If you eat them out of the can, you are safe.
3 - I browned six boneless pork chops in a pan with oil, removed them to a casserole dish, and added a medium chopped onion to the same pan to saute. After a few minutes, I added a cup of chicken stock and a tablespoon of worcestershire to deglaze the pan. I cut up three medium sweet potatoes and layered them over the chops, added salt/pepper/thyme, then poured the onions and stock on top. I covered them and put it in a 375 degree oven for an hour and a half.

I did some writing and a boatload of Sopranos watching and relaxed all day. It was lovely.

  7. I usually just buy canned beans and call it a day, because I'm lazy. But have read about how its healthier to buy bagged and soak; which were yours? I love the way she asked you to be a bridesmaid!

    So I had no idea there were toxins in kidney beans. Good to know. What do you use them in? Outside of chili, I'm not sure I use them in anything.

  9. I want those sweet potatoes in my life. YUM. I'm glad you got some relaxing in - for once your weekend recap didn't leave me breathless!

    I actually spent some time in the kitchen. I KNOW, crazy right? Made a quinoa salad to bring for lunch this week and I'm pretty sure it's awesome. Final verdict coming around 1:30 today.
