the weekend that was

Dog walking, cold brew iced coffee making, Scarface and The Godfather I & II watching, hausfrauing. I also made sweet potato jerky dog treats, which I shared on Facebook but are worthy of sharing again: heat oven to 300 and grease a baking sheet. Slice sweet potato. Roast 25 minutes per side. Store in fridge. My dogs loved them!
This is why I plant marigolds. They grow like crazy and withstand summer heat with aplomb. I spent Saturday morning weeding, deadheading, and doing some dinner prep.
Marla of Luck Fupus and I met at Market East for coffee and a Reading Terminal stroll. It was mid-Saturday craziness of course. I couldn't resist the cheap locally grown tomato prices, along with raspberries and blackberries. And I had to have a strawberry rhubarb pie from Beiler's. The Amish can really do pie.
1&2-We crossed the street to the Field House for a Northeast Bloggers Meet & Greet. It was a nice gathering. Thanks to Rachel at You Can't Google Everything for organizing this day!

Dinner: taco stuffed peppers. Blanch peppers in boiling water and plunge into an ice bath. Brown 1 lb ground chicken and 1/2 onion. Add taco seasoning (4 TBS or 1.5 packets). Cut up a bit of zucchini and add that, then dump in a can of white beans (rinsed) and a can of diced tomatoes with green chiles (drained). Line the bottom of a 13x9 with some salsa if you'd like, otherwise just grease it. Stuff the peppers, top with cheese, cover with foil, and bake at 350 for 20 minutes covered, then 10 minutes uncovered. I used three peppers and could've used four. 
Dessert: strawberry rhubarb pie from the Amish. I'm sad to say that we ate this entire thing in 24 hours. I cannot even describe how amazing it was, but my hips will be able to show you.

I caught up on the last four episodes of Under the Dome and read myself into a coma.
After an exceptional 9.5 hours of sleep, I had some coffee and watched Scarface (thank you Mob Week on AMC), then I got busy in the kitchen. A simple pasta salad with veggie tri-color rotini, black olives, grape tomatoes, mozzarella cheese, and balsamic vinaigrette (olive oil, balsamic vinegar, italian seasoning and salt). For this week's breakfasts: zucchini pie made with homemade whole wheat bisquick. This week's lunches: egg salad.

I made pizza sauce to freeze. I'll use 3-5 cubes per pizza. I took 15 oz cans of tomato sauce and two 6 oz cans of tomato paste and heated them up. I added onion powder, garlic powder, garlic salt, basil, italian seasoning, salt and a bit of sugar to taste. Allow it to cool, freeze in trays, then put in a labeled freezer bag and take out to thaw as needed.

Sunday flew by with laundry, picking up around the house, watching Pulp Fiction and The Sopranos On Demand, and reading. Hotdogs, hamburgers and corn on the cob for dinner.

  10. This was a rather "quiet" weekend for you, too, and still a ton done.
    I may try those taco stuffed peppers in those cute little red, orange,yellow peppers from Sam's. Would be a great appetizer.

  12. The weekend, the month, the summer, etc. are all flying by. I'm not a fan.

    I am so over my flowers. I am done with watering, weeding, all of it. I don't even care what they look like anymore.
