Meal Plan Menu linkup, yo

It's the first Tuesday of the month, which means it's food thangs link up day for me and Nichole at Casa de Crews. Link up with your meal plan, food prep, or just a recipe. Whatever you want, as long as it's related to food and as long as you link back to us.

Here's what's on my plan for this week, much of which was prepped on Sunday:

Breakfasts: Egg muffins. I layered broccoli, sliced grape tomatoes, and some grated pepperjack cheese in my handy square tins. I beat 10 eggs with some ground mustard, garlic powder and salt and poured it in. Baked at 350 for 30 minutes. Eaten with a side of fruit.

Lunch (only needed for Tuesday and Wednesday at work): PB&J on whole wheat sandwich thin, green beans

Sunday Dinner: London broil marinated in a mix of soy sauce, red wine vinegar, basil and oregano; quick Mediterranean pasta salad with halved grape tomatoes, fresh mozzarella, black olives, and an olive oil, balsamic vinegar, garlic powder and basil vinaigrette - I didn't measure, but I'd say it was about 1/2 cup olive oil and 3 TBS of balsamic vinegar, two shakes of garlic powder and about five healthy shakes of basil;  roasted yellow and koosa squash with olive oil and salt; and roasted sweet potatoes with olive oil and honey. Deeelicious.
Monday and Tuesday dinner: tuna and macaroni salad from Kalyn's Kitchen and steamed broccoli. This salad is quite different - it has dill pickles, capers, and green onions, and the dressing is a mix of pickle juice, lemon, mayo and oil. I really like the taste, and if those flavors appeal to you, you will as well.

Wednesday dinner: Baked flounder and steamed broccoli

Thursday: holiday, bitches. Not sure what I'll whip up that day.

Friday dinner: burgers on the grill,  pasta salad, corn on the cob

Cold snacks: Peach and blueberry popsicles from Thug Kitchen. These were so easy. Click on the link to see the original recipe and also a recipe for mango pineapple popsicles. For the peach and blueberry, I did the following:
Add to a blender: 1 cup fresh peaches cut up and frozen, 1/2 cup 100% juice Orange juice, 1/4 cup lowfat organic vanilla yogurt, 1 tsp lemon juice, 1/2 tsp vanilla extract. Blendy blend blend and store in a cup (see Darth Vader below.) Don't wash blender, but do add round two: 1 cup frozen bluberries, 1/2 cup yogurt, 1/4 cup OJ, 1 tsp lemon juice, 1/2 tsp vanilla extract. Blendy blend blend again, put in cup (see Luke Skywalker below).

Pour them into popsicle molds (I alternated, you could do them together if you want) and let freeze for at least 8 hours.
Not cold snacks: no bake energy bites from Baker Lady. Another super easy thing. It's just a cup of oats, 1/2 cup peanut butter, 1/2 cup ground flax seeds, 1/2 cup chocolate chips, and 1/3 cup of honey.

Fruits: peaches, blueberries, strawberries

My friend Judy in Florida sent me her meal plan the last time, which I didn't get until after the fact, so I'm posting it now. Non-blogger friends, please pass yours along if you'd like me to post it!

Sunday: Athenian tilapia, pesto couscous salad with fresh corn, cucumber/tomato/onion salad with red wine vinaigrette.
Monday: BLT - Judy's will be GBTA - gruyere/bacon/tomato/arugala on whole grain
Tuesday: leftovers
Wednesday: out - will have grilled shrimp with roumalade dipping sauce
Thursday: balsamic roasted chicken thighs or sesame chicken, three rice combo (jasmine, basmati, quinoa) made with chicken broth, thyme and lemon, baked asparagus with EVOO and lemon
Friday: homemade pizza using you (meaning mine) sauce recipe. Personal pizzas with Dan's being sauce and cheese and Judy's having veggies as welll.
Saturday: house party buffet, not sure what I'm making yet.

    Bad kitty. Anyway, you always make this seem so effortless and everything looks delicious. Maybe now that Paula Deen is out (which I dont agree with, and I think is horrible what happened to her), the Food Network is looking for a spunky Philly girl! :-)

  2. I love that pampered chef tin; I use it ALL the time! Can you come cook for me? I'm loving your menu this week.

  3. Love seeing all that Pampered Chef in use!! :) Also your order went through just in time. I guess things got way more crazy then they thought and there were some issues later in the morning & afternoon. My mom's and my own orders got caught in the crazy!

  5. All of these sound delicious! Since it is summer, Hubs and I don't cook much...Our meals consist of spinach and mushroom quesadillas or some type of burrito...LOL! This week the burritos have been with my crock-pot buffalo chicken...I will have to post recipe about that because it is delicious!

  8. I love the no-bake energy balls - mine have coconut in them as well and I always use half honey and half maple syrup - yummy!!! Those egg muffins might be happening in our house this week.

  9. i need to plan meals like this! I am so bad at it...and i never have anything for lunch! I took a cucumber yesterday because i didnt want to go shopping

  10. I really really need to bust out a batch of those energy bites. Do they really give you energy or do they just taste good? Last time I made them I just sat there and ate half of them like cookie dough...

  11. Everything looks so healthy, and I can't believe that you made absolutely everything including the snacks for the week. I'd like to try the egg recipe.
